Directions:

* Thinly slice the vegetables and place on a piece of kitchen paper to remove excess moisture.

* Toss the vegetables in the oil, chilli and pepper

* Place the slices on a tray covered with greaseproof paper/foil.

* Bake 180°C for 25-30 minutes (depending on how crunchy you like them).

* Turn half way through cooking.

* Remove from the oven and allow to cool before serving.

- If you make them in batches store in an air tight container.

Serves 1

Ingredients:

1/6th of the homemade hummus (recipe below)

1 large carrot, cut into batons (can be steamed lightly if raw veg makes you bloated)

½ a red pepper, cut into strips

2 sticks celery cut, into batons

8 cherry tomatoes
